Sucralose is an artificial sweetener created through a multi-step chemical process that starts with regular table sugar (sucrose). Scientists modify the sugar molecule by replacing three hydrogen-oxygen groups with chlorine atoms, creating a new compound that tastes incredibly sweet but can't be broken down by our digestive system. This chemical modification is what makes sucralose about 600 times sweeter than regular sugar. As an intense sweetener, sucralose allows food manufacturers to create sweet-tasting products with virtually no calories. You'll find it in diet sodas, sugar-free gum, low-calorie desserts, diabetic-friendly foods, and many "light" or "reduced sugar" products. Because it's so much sweeter than sugar, only tiny amounts are needed, and it remains stable when heated, making it suitable for baking and cooking applications. This is a synthetic sweetener that doesn't occur in nature, created specifically for the food industry.
