Inert, colorless, odorless gas used as a propellant, processing aid, and packaging gas (modified atmosphere packaging, MAP) to displace oxygen, preventing oxidation and spoilage. It is also used as a cryogenic agent (liquid nitrogen) for flash freezing.

Nitrogen is simply the same colorless, odorless gas that makes up about 78% of the air we breathe every day. In food production, nitrogen is extracted from regular air through a process that separates it from oxygen and other gases, creating pure nitrogen gas that can be used in food applications. In the food industry, nitrogen serves as a versatile helper that works in several ways. It acts as a propellant in whipped cream dispensers and aerosol cooking sprays, pushes out the product when you press the nozzle. It's also used as a "packaging gas" – pumped into bags of chips, coffee, and other packaged foods to push out oxygen and keep products fresh longer. You'll also find nitrogen used in ice cream production and other frozen foods as a super-cold freezing agent. Nitrogen is completely natural since it's just concentrated air, making it suitable for all dietary preferences including vegan, vegetarian, and all religious dietary requirements. It's considered extremely safe because it's the same gas we're constantly surrounded by in our atmosphere, and it simply evaporates away without leaving any residue in food.
