Ethyl maltol is a synthetic flavoring compound that's chemically designed to mimic and enhance sweet, caramel-like flavors. It's created in laboratories by modifying maltol, a natural compound found in things like roasted malt and caramelized sugar, through a chemical process that adds an ethyl group (a small carbon-based molecule). The result is white crystals with an intense, sweet, almost cotton-candy-like aroma that's much more potent than regular maltol. This powerful flavor enhancer works by boosting sweet and fruity tastes in food, making other flavors seem richer and more appealing. Because it's 4-6 times stronger than regular maltol, only tiny amounts are needed to make a big difference. You'll commonly find E637 in baked goods like cakes and cookies, confectionery, ice cream, flavored beverages, and various desserts. It's particularly popular in products that aim for that distinctive "baked" or "caramelized" taste.
