An inorganic salt used primarily as an anti-caking agent, emulsifier, and stabilizing agent. It also serves as a source of the essential minerals magnesium and phosphorus.

Magnesium diphosphate is made by combining magnesium (usually from magnesium carbonate or magnesium oxide, which come from mineral deposits) with phosphoric acid. The resulting compound contains both magnesium and phosphorus - two minerals that are essential nutrients for our bodies. The manufacturing process involves carefully controlling the pH and temperature to create the right crystal structure. This additive primarily serves as an anticaking agent, which means it prevents powdered foods from clumping together by absorbing moisture and creating a barrier between particles.
