It's produced by bubbling ammonia gas (made from nitrogen and hydrogen) into pure water until the desired concentration is reached. While ammonia has a strong, distinctive smell that most people recognize from household cleaners, when properly used in food processing, it's completely safe and leaves no detectable odor or taste. This additive functions as an acidity regulator and processing aid, helping to control pH levels in various food manufacturing processes. It's commonly used in cocoa processing, where it helps neutralize the natural acids in cocoa beans and contributes to developing the smooth, mellow chocolate flavor we're accustomed to.
