Potassium hydroxide, also known as caustic potash, is a white or slightly yellowish solid that comes in flaky or pellet form. It's manufactured industrially through a process called electrolysis, where an electric current is passed through potassium chloride (a salt) dissolved in water, separating it into its component parts. The resulting potassium hydroxide is highly alkaline, meaning it's very basic on the pH scale – the opposite of acidic. As an acidity regulator, E525's main job is to control the pH levels in food products, making them more alkaline when needed. You'll find it used in the processing of cocoa and chocolate products, some baked goods, and certain dairy products. It's also used in food manufacturing to help with processes like peeling fruits and vegetables, and in the production of some soft drinks where precise pH control is crucial for taste and preservation. This synthetic additive is suitable for vegetarian, vegan, and most religious dietary requirements since it contains no animal products or prohibited substances. However, potassium hydroxide is a very strong alkali that requires careful handling during food production – it's completely neutralized in the final food products you eat. People on potassium-restricted diets should be aware that this additive does contribute to overall potassium intake, though typically in very small amounts.
