E442 – Ammonium salts of phosphatidic acid
EmulsifierDescription
Mixture of ammonium salts of partially hydrogenated phosphatidic acids derived from edible fats and oils
Notes
Ammonium phosphatides are created by treating natural phospholipids (fatty substances found in plant and animal cells) with ammonia. The process typically starts with lecithin extracted from soybeans or sunflower seeds, which is then chemically modified by adding ammonium salts. Think of phospholipids as nature's own emulsifiers – they're the same compounds that help keep cell membranes stable in all living things. This additive works as an emulsifier, which means it helps oil and water mix together smoothly instead of separating. You'll most commonly find E442 in chocolate products, where it helps create that smooth, creamy texture and prevents the chocolate from becoming grainy or separating. It's also used in some baked goods and confectionery to improve texture and shelf life. While the starting materials (like soy lecithin) are natural, the final product is considered a processed ingredient due to the chemical modification with ammonia. It's generally suitable for vegetarians and vegans when derived from plant sources, though those with soy allergies should check labels carefully if soy-derived lecithin was used as the starting material. The additive is approved for use in most countries and considered safe at typical consumption levels.
