Gellan gum is produced through bacterial fermentation, which might sound unusual but is actually a very controlled and clean process. The gum is then extracted, purified, and dried into a powder - similar to how other fermented products like yogurt or cheese are made, just on a more industrial scale. This ingredient is prized for its ability to create gels and act as a thickener, even in very small amounts.
