Notes
Gum arabic, also known as acacia gum, comes from the hardened sap of Acacia trees that grow primarily in the Sahel region of Africa, particularly in Sudan. The trees naturally produce this sap as a protective response, and it's harvested by making small incisions in the bark and collecting the golden, glass-like chunks that form. These chunks are then processed and ground into a powder that dissolves easily in water. As an emulsifier and stabilizer, gum arabic helps oil and water-based ingredients stay mixed together and prevents products from separating or changing texture over time. You'll find it in a wide variety of everyday foods including soft drinks (where it helps flavoring oils stay dispersed), candies and gummies, baked goods, and as a coating on pills and tablets. It's also commonly used in icing and cake decorating because it dries to a smooth, glossy finish. This ingredient is completely natural and has been used in food for thousands of years. It's suitable for vegetarians, vegans, and meets the requirements of most religious dietary laws. Gum arabic is considered extremely safe and is even used in some traditional medicines. It's also unique among food additives because it's a significant source of income for rural communities in Africa, making it both a functional ingredient and an important fair-trade commodity.
