Tragacanth is a natural gum that comes from the dried sap of Astragalus plants, which are thorny shrubs that grow primarily in Iran, Turkey, and other parts of the Middle East. To harvest tragacanth, workers make small cuts in the plant stems, and the sap naturally oozes out and hardens into ribbon-like pieces when exposed to air. These pieces are then collected and ground into powder. This ingredient works as both a stabilizer and emulsifier in foods, helping to keep different ingredients mixed together and preventing separation. Tragacanth is particularly good at creating smooth textures and maintaining consistency in products over time. You'll most commonly find it in confectionery items like pastilles and lozenges, some ice creams, salad dressings, and specialty baked goods. Tragacanth is completely natural and plant-based, making it suitable for vegetarians, vegans, and most religious dietary requirements.
