Oat gum is extracted from oat bran, the fibrous outer layer of oats that's removed during regular oat processing. The bran is treated to isolate specific types of soluble fiber, particularly beta-glucan, which forms the basis of this natural thickening agent. Essentially, it's capturing the same heart-healthy fiber that makes oats nutritious and turning it into a food additive. As both a thickener and stabilizer, oat gum helps maintain smooth textures and prevents ingredients from separating in processed foods. You might find it in low-fat dairy products, gluten-free baked goods, and various sauces where it provides body and consistency without adding calories or significantly affecting taste. Since it comes directly from oats, this additive is natural and suitable for vegetarians and vegans. However, people with celiac disease should be aware that while oats are naturally gluten-free, cross-contamination during processing is possible, so they should look for certified gluten-free products. The beta-glucan in oat gum may even provide some of the same cholesterol-lowering benefits associated with eating whole oats.
