Locust bean gum comes from the seeds of the carob tree, which grows naturally around the Mediterranean. To make this additive, the seeds are removed from carob pods (the same pods that produce carob powder as a chocolate alternative), then ground up and processed to extract a white, powdery substance called galactomannan - essentially a type of natural fiber. This gum works as a thickener in foods, helping to create smooth, creamy textures without changing the taste. You'll commonly find it in ice cream, yogurt, salad dressings, and sauces where it prevents ingredients from separating and gives that satisfying, thick consistency we expect from these products. Locust bean gum is completely natural and plant-based, making it suitable for vegetarians, vegans, and all religious dietary requirements. It's been used safely in food for decades and is considered one of the gentler thickening agents - many people can tolerate it well even if they have sensitivities to other additives.
