Ascorbyl palmitate is created by combining vitamin C (ascorbic acid) with palmitic acid, a fatty acid that's naturally found in palm oil, animal fats, and many other sources. This chemical marriage creates a unique ingredient that has the antioxidant properties of vitamin C but can dissolve in fats and oils rather than just water, making it useful in different types of foods. This fat-soluble antioxidant prevents oils, fats, and fat-containing foods from becoming rancid and developing off-flavors.
