Fumaric acid is a white, crystalline powder that occurs naturally in many plants and vegetables, including mushrooms, lichen, and Iceland moss. While it can be extracted from natural sources, the fumaric acid used in food production is typically made synthetically by converting another organic acid called malic acid through a chemical process. As an acidulant, fumaric acid adds tartness to foods and helps regulate acidity levels, giving products a pleasant sour taste. You'll find it in powdered drink mixes, gelatin desserts, pie fillings, and some baked goods.
