Calcium sulfite is a white, powdery compound produced by combining calcium hydroxide (lime) with sulfur dioxide gas. This reaction creates a stable sulfite that, like other members of this preservative family, releases sulfur dioxide when it encounters moisture. The manufacturing process involves carefully controlling the reaction between these two chemicals in industrial facilities to create a consistent, food-grade product. This preservative functions by releasing sulfur dioxide, which effectively prevents spoilage by inhibiting the growth of harmful bacteria, yeasts, and molds, while also preventing oxidation that causes food to deteriorate or change color. Calcium sulfite appears in many of the same products as other sulfites - you'll find it in dried fruits, wine, fruit juices, and various processed foods where maintaining freshness and appearance is crucial.
