Lutein is a naturally occurring yellow-orange pigment that belongs to a family of compounds called carotenoids – the same group that gives carrots their orange colour. For commercial food use, lutein is typically extracted from marigold flower petals through a process involving solvents that pull out the coloured compounds. The petals are processed to concentrate and purify the lutein, resulting in a yellow to orange powder that can be used in food production. This additive works as a natural yellow-orange food colouring agent, providing warm, sunny hues to various products. You'll commonly find it in egg products (where it enhances the natural yellow colour), baked goods, dairy products like butter and cheese, beverages, and some processed foods where manufacturers want to achieve natural-looking yellow or orange tones. It's particularly valued because it provides colour while also offering some nutritional benefits. Lutein is completely natural and suitable for vegetarian, vegan, and all religious dietary requirements. Interestingly, beyond its colouring properties, lutein is also beneficial for eye health – it's the same compound that naturally accumulates in our retinas and may help protect against age-related eye conditions.
