Notes

Brilliant Black BN is a synthetic food colouring created in laboratories through chemical processes involving coal tar derivatives or petroleum-based compounds. The manufacturing process combines specific aromatic compounds with sulfonic acid groups to create a stable black dye that dissolves easily in water. Despite its industrial-sounding origin, it goes through extensive purification to meet food safety standards. This additive serves as a black colourant in foods, helping manufacturers achieve deep, consistent black colours that would be difficult to obtain naturally. You'll commonly find E151 in black-coloured sweets, liquorice products, some decorative cake icings, certain processed fish products like caviar substitutes, and occasionally in dark-coloured beverages or sauces where an intense black appearance is desired. As a synthetic additive, E151 is suitable for both vegetarian and vegan diets since it contains no animal-derived ingredients. It's approved for use in many countries, though some regions have specific limits on the amounts that can be used. The additive has undergone safety testing, but like many artificial colours, some people prefer to avoid synthetic dyes in favour of natural alternatives, though truly natural black colourants are quite rare in food production.
