Plain caramel is the simplest and most natural form of caramel coloring, made by carefully heating common sugars like sucrose, glucose, or fructose at high temperatures (around 340°F/170°C). This process, called caramelization, is the same thing that happens when you make caramel sauce at home - the sugars break down and reform into new compounds that create that characteristic rich, dark brown color and complex flavor. This ingredient serves as both a coloring agent and flavor enhancer, giving foods an appealing brown color and adding subtle sweet, slightly bitter notes. You'll find it in countless everyday products including cola drinks, brown breads, soy sauce, beer, whiskey, baked goods, and many sauces and gravies where that appetizing brown color is desired. E150a is considered the most natural of all caramel colorings since it's made from just heated sugar with no additional chemicals. It's suitable for vegetarians and vegans, and generally acceptable under most religious dietary laws since it's simply processed sugar.
