Pullulan is a natural polysaccharide (a type of carbohydrate made of many sugar units linked together) that's produced through fermentation. It's created when a specific type of yeast-like fungus called Aureobasidium pullulans feeds on simple sugars like glucose or starch. During this fermentation process, similar to how yeast makes bread rise or creates alcohol, this microorganism produces pullulan as a byproduct. The resulting substance is then harvested, purified, and dried into a powder. As a food additive, pullulan serves as an excellent film-forming agent and coating material. It creates transparent, edible films that are particularly good at blocking oxygen, which helps keep foods fresh longer.
